Ralph’s Christmas Chestnut Stuffing

Serves 8


Ingredients

  • 1 cup chopped chestnuts or walnuts

  • 2 cups bread cubes

  • 4 eggs

  • ½ cup raisins

  • 2 cups cooked and strained rice

  • 1 cup butter

  • 1 cup chopped onion

  • 1 cup chopped celery

  • 4 strips bacon, chopped

  • 1 pound ground beef


  1. Cook rice according to directions and set aside. 

  2. Melt butter and add in chopped onions, cook for 3 minutes until translucent. Add in chopped celery and cook another 3 minutes until tender. 

  3. Add in bacon and hamburger meat and brown, about 5-8 minutes. 

  4. Add in rice, nuts, and raisins. Stir well and remove from heat. Add in cubed bread.

  5. Break eggs into a small bowl and whisk. Mix into the stuffing.

  6. Stuffs one medium-sized bird (around 12-15 lbs). Or, cook at 350ºF 20 minutes covered, and another 10-15 minutes uncovered until slightly golden.
