Paul’s Fried Calamari

Makes about 55 1-½ inch meatballs.


Ingredients

  • Flour

  • Parmesan cheese (1 spoonful for every ½ cup or so of flour)

  • Salt and pepper

  • Lemon wedges for serving

  • 1-2 lbs fresh calamari

  • ½ - 1 cups white wine

  • 4-6 crushed garlic cloves

  • Juice of ½ - 1 lemon

  • Peanut oil for frying


  1. Marinate calamari in white wine, lemon juice and garlic for at least 4 hours.

  2. While fryer / oil is heating to 375ºF, mix flour with cheese and salt and pepper.

  3. Remove calamari from marinade and dredge in flour mixture.

  4. Cook a handful of calamari at a time, 1-2 minutes until just golden.
