Alice’s Acorn Squash
Serves 4.
Ingredients
2 tablespoons light brown sugar
Salt and pepper
2 medium acorn squash
2 tablespoons butter, plus additional for greasing pan
Preheat oven to 425ºC and grease a rimmed baking sheet with butter.
Cut squash in half and remove seeds. Cut a little off the bottom of each so they sit straight, if you want.
Place on the pan scooped-side down for 25 minutes. Remove from oven, pierce with a fork all over, and add ½ tablespoon of butter and ½ tablespoon of brown sugar to each squash half and season with salt and pepper. Cook scooped-side up for another 25-30 minutes.
