Alice’s Acorn Squash

Serves 4.


Ingredients

  • 2 tablespoons light brown sugar

  • Salt and pepper

  • 2 medium acorn squash

  • 2 tablespoons butter, plus additional for greasing pan


  1. Preheat oven to 425ºC and grease a rimmed baking sheet with butter.

  2. Cut squash in half and remove seeds. Cut a little off the bottom of each so they sit straight, if you want.

  3. Place on the pan scooped-side down for 25 minutes. Remove from oven, pierce with a fork all over, and add ½ tablespoon of butter and ½ tablespoon of brown sugar to each squash half and season with salt and pepper. Cook scooped-side up for another 25-30 minutes.
