Mary’s Baccala Stew

The original recipe Grandma Alice used may have gotten lost somewhere along the way, but we’ll never forget everyone remembering how she used to keep it in the bathtub before Christmas!


Ingredients

  • ½ teaspoon red chili flakes

  • 28 oz canned peeled whole tomatoes

  • ½ cup diced celery

  • ½ white wine

  • 2 cups diced red potatoes

  • 10-12 dried black Sicilian olives

  • Salt and pepper

  • 6 8-oz salt cod pieces (or fresh cod)

  • ¼ cup olive oil

  • 8 anchovies, drained and chopped

  • 3 garlic cloves, thinly sliced

  • 1 tablespoon dried oregano

  • ½ cup diced onion


  1. Soak salted cod in a large bowl for 48 hours, changing out the water 2-3 times. If using fresh, skip this step.

  2. In a large skillet, combine olive oil, anchovies, garlic, oregano, onion, and chili flakes. Cook on medium high for 3 minutes.  

  3. Add the cod and cook 2 minutes on each side. 

  4. Add in the canned tomatoes with their juice. Crush tomatoes with a spoon.

  5. Add in the celery, wine, potatoes, olives, salt, and pepper. Bring to a boil and let simmer 10 minutes until the cod flakes.
