Mary’s Banana Bread


Ingredients

  • 1 cup mashed over-ripe bananas (3 bananas, I often put in 1 or 2 extra)

  • 1 tablespoon lemon juice

  • 1 cup walnuts (optional)

  • 1 cup chocolate chips (optional)

  • ¾ cup sugar

  • ½ cup shortening or butter

  • 2 eggs

  • 2 cups flour

  • 1 teaspoon baking soda

  • ½ teaspoon salt


  1. Preheat oven to 350º F.

  2. Cream sugar, shortening/butter, and eggs until light.

  3. In another bowl, whisk together flour, baking soda and salt. In another bowl, mix together the mashed bananas and lemon juice. 

  4. Add dry ingredients to wet ingredients, alternating with the bananas and lemon juice. Stir in nuts.

  5. Spread in greased 9x3x3” loaf pan. Bake for 55-60 minutes. 

  6. Remove from pan immediately and cool on rack.
