Michelle’s Buttermilk Pancakes

Makes about 8 pancakes. 


Ingredients

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • 2 eggs

  • Maple syrup

  • 1 cup all-purpose flour

  • 1 cup whole grain wheat flour

  • ¼ cup sugar

  • 2 ¼ teaspoons baking powder

  • 2 cups buttermilk (or juice of 1 lemon and milk for a total of 2 cups)

  • ¼ cup (½ stick) butter, plus additional butter for greasing the pan

  • 1 cup fresh berries (blueberries or mixed berries), or 2 fresh bananas cut in thin slices… or ½ - ¾ cup chocolate chips, whatever you’re in the mood for!


  1. Whisk together the flour, sugar, baking powder, baking soda, and salt.

  2. In another smaller bowl, whisk together the eggs, buttermilk, and melted butter (make sure butter isn’t warm or it will cook the eggs). Mix in wet ingredients in with wet – don’t over mix. Mix in fruit last.

  3. Melt 1 tablespoon of butter at a time and fry two scoops of batter at a time, a few minutes on each side. Add butter between new scoops to avoid burning. Cooking time will shorten as pan heats – be careful not to burn!

  4. Serve with Canadian maple syrup.
