Luis’s Chipa Bread

Makes about 35 rolls.


Ingredients

  • 2 oranges, juiced (optional)

  • 2 sticks butter, completely softened

  • Milk

  • Butter

  • 8 cups mandioca flour (can substitute with tapioca flour)

  • 3 eggs

  • 2 ½ cups thickly shredded Parmesan cheese

  • 2/12 cups thickly shredded Gouda cheese (known as “red rind” cheese in Argentina)


  1. Preheat the oven to 375º F. Lightly grease a large baking sheet with butter.

  2. On a flat surface, combine the mandioca flour with the shredded Parmesan cheese and form a ring.

  3. In the middle, add the eggs, orange juice, and butter. With a fork, mix in the middle ingredients into the flour mixture. Add milk as needed to the middle to create a smooth dough. Add in the shredded Gouda cheese last.

  4. Let the dough rest about an hour.

  5. Form 1 to 1 ½ inch balls of dough.

  6. Cook 15-20 minutes until slightly golden.
