Chimichurri Steak and Bean Salad
Ingredients
Bean Salad
1 Bunch of Parsley
1 Bunch of Cilantro
1 Shallot
1 Can Garbanzo Beans
1 Can Northern White Beans
2 Jars Roasted Red Peppers
Mozzarella balls
Shredded Parmesan
Red Pepper Flakes
Dressing
Olive Oil
Juiced Lemon
Red Wine Vinegar
Salt
Black Pepper
Steak
Flank Steak
Salt
Lemon
Garlic
Cilantro
Olive Oil
Steak
Mix together salt, fresh lemon juice, olive oil, and fresh chopped garlic for Chimichurri marinade
Marinade the steak for at least an hour
Grill steak until medium rare
Let rest while you prepare the rest of the salad
Bean Salad
Roughly chop cilantro and parsley and add to a large bowl
Drain/strain beans and roasted red peppers and add them to the bowl
Finely chop the shallot and throw it in
Add mozzarella balls. You can cut them up if you want smaller bites
Add shredded parmesan and red pepper flakes to taste
Chop flank steak into bite-sized pieces and add to the salad
Mix it all together
Dressing
Juice 1-2 lemons
Add equal parts olive oil and red wine vinegar
Use salt and pepper to taste
If you are going to eat it all at once you can add dressing right away. If you are going to split it into multiple meals, wait to add dressing until right before eating.
