Mary’s Irish Soda Bread


Ingredients

  • ½ teaspoon salt

  • 1/3 cup unsalted butter, melted

  • 1 1/3 cups buttermilk

  • 1 large egg, lightly beaten

  • green sugar sprinkles (optional)

  • 4 cups all-purpose flour (optional: substitute half with whole wheat flour)

  • 2 cups sugar

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder


  1. Preheat oven to 350º F. Grease a 9-10 in. cast-iron skillet or large baking sheet.

  2. Combine flour, sugar, baking soda, baking powder and salt in a large bowl; make a well in the center.

  3. In a smaller bowl, combine butter, buttermilk and egg.

  4. Add the liquids to the dry ingredients, pouring it into the well and stirring to form a soft dough.

  5. Transfer batter to skillet, shaping it into a ball. Or with lightly floured hands, shape it into a ball on a baking sheet. Slash an X across the top. Lightly decorate with green sugar sprinkles.

  6. Bake until set, 60 minutes.
