Paul’s Fried Calamari
Makes about 55 1-½ inch meatballs.
Ingredients
Flour
Parmesan cheese (1 spoonful for every ½ cup or so of flour)
Salt and pepper
Lemon wedges for serving
1-2 lbs fresh calamari
½ - 1 cups white wine
4-6 crushed garlic cloves
Juice of ½ - 1 lemon
Peanut oil for frying
Marinate calamari in white wine, lemon juice and garlic for at least 4 hours.
While fryer / oil is heating to 375ºF, mix flour with cheese and salt and pepper.
Remove calamari from marinade and dredge in flour mixture.
Cook a handful of calamari at a time, 1-2 minutes until just golden.
