Mary’s Thanksgiving Sweet Potatoes
Serves 8.
Ingredients
2 cups dark brown sugar
3 large sweet potatoes
1 cup butter
Pre-heat oven to 350º F.
Clean sweet potatoes and cut into large 1-inch slices (don’t peel).
Put sweet potato slices in a pot of water and bring to a boil. Cook until fork tender, about 12 minutes. Drain and allow to cool. Once cool, remove peel.
Place sweet potatoes in a 13’ x 9’ baking dish in an even layer.
Melt butter in a small saucepan and stir in the brown sugar. Let simmer 5 minutes, then pour over the sweet potatoes.
Transfer dish (uncovered) to oven and cook 30 minutes, until bubbling.
Let cool before serving.
