Mary’s Thanksgiving Sweet Potatoes

Serves 8.


Ingredients

  • 2 cups dark brown sugar

  • 3 large sweet potatoes

  • 1 cup butter


  1. Pre-heat oven to 350º F.

  2. Clean sweet potatoes and cut into large 1-inch slices (don’t peel).

  3. Put sweet potato slices in a pot of water and bring to a boil. Cook until fork tender, about 12 minutes. Drain and allow to cool. Once cool, remove peel.

  4. Place sweet potatoes in a 13’ x 9’ baking dish in an even layer.

  5. Melt butter in a small saucepan and stir in the brown sugar. Let simmer 5 minutes, then pour over the sweet potatoes.

  6. Transfer dish (uncovered) to oven and cook 30 minutes, until bubbling.

  7. Let cool before serving.
