Thumbprint cookies

Makes 3 dozen cookies.


Ingredients

  • ¼ teaspoon salt

  • 1 cup flour

  • ¾ cup finely chopped walnuts

  • Raspberry jelly

  • ½ cup butter

  • ¼ cup packed light brown sugar

  • 1 egg, separated

  • ½ teaspoon vanilla extract


  1. Preheat oven to 350°F.

  2. Cream together butter, sugar, egg yolk, and vanilla extract.

  3. Add in salt, then flour.

  4. Beat egg white with a fork.

  5. Shape dough into 1-inch balls. Dip in egg white, then chopped nuts and place on an ungreased baking sheet. Press thumb gently in the middle of each cookie.

  6. Bake 10-12 minutes.

  7. As soon as they come out of the oven, put a teaspoon of jelly in the thumbprint of each. Then move to a wire rack.
