Thumbprint cookies
Makes 3 dozen cookies.
Ingredients
¼ teaspoon salt
1 cup flour
¾ cup finely chopped walnuts
Raspberry jelly
½ cup butter
¼ cup packed light brown sugar
1 egg, separated
½ teaspoon vanilla extract
Preheat oven to 350°F.
Cream together butter, sugar, egg yolk, and vanilla extract.
Add in salt, then flour.
Beat egg white with a fork.
Shape dough into 1-inch balls. Dip in egg white, then chopped nuts and place on an ungreased baking sheet. Press thumb gently in the middle of each cookie.
Bake 10-12 minutes.
As soon as they come out of the oven, put a teaspoon of jelly in the thumbprint of each. Then move to a wire rack.
