Mary’s Tiramisu


Ingredients

  • 1 cup (10 ounces) mascarpone cheese

  • About 20 Italian ladyfingers

  • Cocoa powder

  • Cinnamon

  • 3 large eggs separated

  • 1/2 cup plus 1/8 teaspoon sugar

  • 1 tablespoon plus 1 cup espresso or strong coffee

  • 2 tablespoons amaretto 


  1. In a large bowl, combine egg yolks, the ½ cup sugar, the 1 tablespoon espresso and the amaretto. Beat the mixture with a mixer until foamy, 2-3 minutes. 

  2. Add mascarpone cheese and beat for 3-5 minutes or until mixture is very smooth.

  3. In another large bowl combine the egg whites and the 1/8 teaspoon sugar and beat until the egg whites are stiff. Gently fold the mascarpone mixture into the whites. Set aside.

  4. Pour espresso into a small bowl. Dip both sides of lady fingers quickly into the espresso. Arrange one layer of lady fingers in serving bowl. Then spread a layer of mascarpone mixture over. Continue layering, finishing with a mascarpone layer. Sift cocoa and cinnamon over the top and refrigerate at least 1 hour before serving.
