Mary’s Zucchini Nut Bread


Ingredients

  • ¼ teaspoon baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 1 teaspoon allspice

  • 1 teaspoon cloves

  • ½ chopped nuts (i.e. walnuts)

  • 2 cups sugar

  • 1 cup canola oil

  • 3 eggs

  • 1 teaspoon vanilla extract

  • 2 cups grated zucchini

  • 3 cups flour


  1. Preheat oven to 350º F.

  2. Cream sugar, oil, eggs and vanilla until light. Mix in zucchini. 

  3. In another bowl, whisk together flour, baking powder, baking soda, salt, and spices. 

  4. Add dry ingredients to wet ingredients. Stir in nuts.

  5. Spread in greased 9x3x3” loaf pan. Bake for 55-60 minutes. 

  6. Remove from pan immediately and cool on rack.
