The Giudisci’s Ricotta Cookies


Ingredients

Frosting:

  • ½ stick butter, softened

  • 2 cups powdered sugar

  • ½ teaspoon vanilla extract

  • ½ teaspoon almond extract

  • 1 tablespoon milk

Cookies:

  • 1 cup butter

  • 2 cups sugar

  • 2 cups ricotta cheese

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1 teaspoon almond extract

  • 2 teaspoons baking powder

  • 1 teaspoon salt

  • 4 cups flour


  1. Preheat oven to 325°F.

  2. Cream together butter and sugar.

  3. Add eggs one at a time, then vanilla and almond extracts.

  4. Stir in ricotta cheese until smooth.

  5. Add in salt and baking powder, and then flour a little at a time.

  6. Drop onto lightly greased baking sheets and bake 13-15 minutes.

  7. Cool on a rack and prepare frosting: cream together butter and sugar, then extracts. Add milk a little at a time to loosen to desired consistency.

  8. Frost when cooled or only slightly warm.
