The Giudisci’s Ricotta Cookies
Ingredients
Frosting:
½ stick butter, softened
2 cups powdered sugar
½ teaspoon vanilla extract
½ teaspoon almond extract
1 tablespoon milk
Cookies:
1 cup butter
2 cups sugar
2 cups ricotta cheese
2 large eggs
1 teaspoon vanilla extract
1 teaspoon almond extract
2 teaspoons baking powder
1 teaspoon salt
4 cups flour
Preheat oven to 325°F.
Cream together butter and sugar.
Add eggs one at a time, then vanilla and almond extracts.
Stir in ricotta cheese until smooth.
Add in salt and baking powder, and then flour a little at a time.
Drop onto lightly greased baking sheets and bake 13-15 minutes.
Cool on a rack and prepare frosting: cream together butter and sugar, then extracts. Add milk a little at a time to loosen to desired consistency.
Frost when cooled or only slightly warm.
